Simonsvlei’s name originates from the South African wine industry’s founder, Simon van der Stel, and the surrounding wetland landscape, the “vlei”. Founded in 1945, the team have pioneered viticultural and winemaking practices as well as promoting the industry as a whole. From the cellar, you can see the stunning Paarl Mountain – the second largest granite outcrop in the world. A Mediterranean climate of cold, wet winters and hot, dry summers produces grapes of intense flavour and high sugar levels. Simonsvlei employ 36 farms and have over 1,000 hectares under vine. Grown on East-facing vineyards with minimal viticultural intervention. 50% of the vines are trained as “bush” vines, whilst 50% are trained by the 5-wire Perold trellising system.
Winemaking Techniques
Harvest takes place between mid-February and mid-March. The grapes are destemmed before being fermented in stainless steel tanks at 12 – 14°C for 5 to 10 days. Once fermentation is complete, the resulting wine is cold-stabilised and filtered using diatomaceous earth prior to bottling.
Tasting Note
Vibrant aromas of warm stone fruit, citrus and ripe tropical fruit - guava and pineapple. A fantastic underlying mineral core and lime tone. The mouthfeel is round with green apple and melon flavours leading to a rich and creamy finish, balanced by zippy acidity.
Food Pairings
The perfect accompaniment to roasted vegetables, pasta or salad. Alternatively, try with white meats or seafood.
