The Greuzard family came from the Macon region of Burgundy; wine making to them is “passion”. Domaine de l'Herbe Sainte is a family vineyard of 55 Ha.
The name 'Herbe Sainte' or Herbo Santo means full of 'aromatic plants with medicinal virtue'. That is to say there are aromas of artémisia, arnica, foin d'odeur (sweet grass), and many more.
The location is near one of the important places of History in Languedoc, the Cathar City of Minerve.
The Domaine itself is bordered by the river Cesse, which flows into the Canal du Midi, just 500 meters from the Domaine and is classified as a "World Heritage" site.
The winegrowers method of cultivation is ‘vitealys’ and are engaged to produce grapes according to the rules of this reasoned culture. These are defined in specifications whose applications are checked by the Véritas Bureau, an independent organisation promoting methods and cultivating practices. Limiting parasitic diseases and maintaining a high biological variety of viticulture ecosystems and healthy environment by reducing water, soil and air pollution.
The terroir is ‘rolling shingles’ (pebbles) on the plateau between the canal du Midi and river Cesse.
The grapes grown are Chardonnay, Sauvignon Blanc, Viognier, Colombard, Merlot, Syrah, Cabernet Sauvignon, & Grenache.
At harvesting time, these grape varieties are harvested, per grape variety, when at their full maturity.
For the red grape vinification, systematic destalking and fermentation in vats at (27°C) and for the white grape vinification, nocturnal harvesting, destalking, pressing, fermentation in vats (15-18°C) and then ageing on fine lees.
